These stringy and slurpy noodles paired with soy-sauce and ginger-garlic oil also known as Lamian in Chinese are the perfect combination of sweet, sour and spicy. And guess what? These hand-pulled noodles are super-easy to make and obviously are super-easy to eat! Here is my recipe for hand-pulled noodles-
Ingredients:
- 3 cups all-purpose flour
- ½ cup water
- ½ tsp salt
- Lots of oil
- 1 medium onion
- 10 garlic cloves
- 2-inch ginger
- 1/3 cup soya-sauce
- 1 tbsp Chinese black vinegar
Method:
1.Combine flour and salt and mix it well. Add water to this mix and knead it for 8 min. The dough should not be so wet and should be very smooth after the kneading.
2.Cover the dough with a semi-wet cloth and let it rest for 5 min. After 5 min, the dough will be easier to work with.
3.Take the dough and roll it into a circle of 20 cm diameter and ½ cm thickness. Apply lots of oil in the dough.
4.Then cut the rolled-out dough into strips of 1.5 cm wide. You will see that the dough is very soft and pliable.
5.Take a plate and again coat it with plenty of oil. Transfer the strips of dough into the plate properly. Coat the strips with oil again.
6.Cover the plate with cling wrap and rest it for minimum 2 hours.
Note: Oil is key in this amazing recipe as it is the oil that helps in the easy pulling of the noodles.
7.After 2 hours, take the strips one at a time and just stretch it carefully with your hands. You will get around 120 cm long noodle strand.
8.Boil the noodles in hot water for 15 min and then strain it.
9.In a pan, over medium heat, add 2 tbsp of oil and chopped garlic and ginger.
10.Once the garlic and ginger are browned add chopped onions.
11.When the onions become translucent, add the soya-sauce and vinegar.
12.Put in the noodles. Stir the noodles with the sauce properly so that, every strand is coated with the sauce.
13.After it is done, garnish with coriander and onion leaves.
You can always serve these noodles with any fried meat of your choice.
