Crispy Pork Gyoza

Crispy, Crunchy and (s)Crumptious! are everything that makes for a great heavenly food experience. Want to know how to get all of this in one dish?

Here is a recipe for my version of Crispy Pork Gyoza that might actually rock your taste buds!


  • 4 cups or 350 gm all-purpose flour
  • 1 cup water or 150 ml
  • 250 gm pork pieces
  • 1 tsp pepper powder
  • 1 tsp chilli powder
  • 1 tsp Chinese five-spice powder (star anise, cloves, cinnamon, peppercorn and fennel seeds)
  • 1 tbsp vinegar
  • 1 ½ tbsp soya sauce
  • 1 tbsp vegetable oil
  • Salt to taste
  • Method:

For Gyoza

1.Mix the flour and water and knead well for 10 min. (This stretches the gluten strands which eventually makes the dough like elastic)

2.Rest for 2 hours.

3.After resting, divide the dough into as many balls as you want. Depending on what size you want the gyoza to be.

The Dough

4.Roll the balls into circles.

For the filling:

5.In a heated frying pan, add the oil and after the oil is heated add the pork pieces.

6.After the pork has fried for around 15-20 min, grind the pork pieces, pepper powder, vinegar, soya sauce, chilli powder, Chinese five-spice and salt

Pork Mince

7.Chill the filling in the fridge for around 15 min. This helps in filling the gyoza wrappers properly.

For making the Crispy Pork Gyoza:

8.Fill the wrappers with the pork mince and keep them aside.

9.Heat a tbsp of oil in a non-stick flat pan.  Arrange 5 gyozas in the pan and cook for 3 to 4 mins until the bases are brown.

10.In the meantime, combine a tbsp of cornflour, plain flour and half a cup of water in a bowl.

11.Pour little of the flour mixture over the gyoza and cover it and let it cook for 5 min. Then, let it cook uncovered for 3 min till the flour mix becomes crispy. Flip onto a plate.

12.Do the same for the rest of the gyozas and your crispy pork gyoza will be ready to share with your family.

13.Have it with a chilli sauce dip or even a garlic sauce dip.
