Cherries & Raisin Muffin with Caramelized sugar

What is better than freshly baked muffins and a hot cup of tea on a lazy evening? Muffins are soft delicious and buttery. What else do you need when you have muffins to devour.

So here is a simple muffin recipe that anyone can use. Follow these easy to bake muffin recipe and you’ll be sinking your teeth into soft and buttery muffins soon!

Ingredients:

  • 3 ½ cups or 300 gm plain flour
  • 1 ½ tsp or 5 gm baking powder
  • 1 ½ tsp or 5 gm baking soda
  • ½ cup or 100 gm plain yogurt
  • 1 ½ tsp or 5 gm salt
  • 35 gm butter (room temperature)
  • ½ cup or 100 gm veg oil
  • 1 cup or 160 gm caster sugar
  • 2 tbsp caramelized sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • ½ cup or 100 gm milk
  • ½ cup raisins
  • ½ cup cherries

Method:

  1. Pre-heat oven to 180 degree Celsius.

2. Sieve the plain flour, baking powder, baking soda and salt and keep it aside.

3. Mix the wet ingredients such as the eggs, yoghurt, vegetable oil, butter and milk using a stand mixer. (if you do not have a stand mixer, you can easily use a whisk or a ladle)

4. Make sure that there are no lumps.

5. Add in the caster sugar and mix until smooth and fluffy.

6. Add the plain flour little at a time.

7. Finally, add the caramelized sugar and mix lightly. (For the caramelizing sugar, heat the sugar in a pan over medium heat. Once the sugar starts browning, shake the pan lightly once in a while till all the sugar melts and then caramelizes. Make sure the sugar doesn’t burn. Once all the sugar has caramelized pour in 2tbsp of water and mix till the water has mixed with caramelized sugar )

8. Chop raisins and cherries into tiny pieces.

9. Spoon the batter evenly into each cup or liner in the muffin pan, filling each about 3/4 of the liner. Sprinkle as many raisins and cherries as you want on top of the muffin batter. Bake the muffins for 20 mins.

10. After 20 mins check if the muffins are done by poking a toothpick into the middle of the muffin and if the toothpick comes out clean and dry that means the muffin is ready to go.

And voila! Your muffins are done. Serve these with a hot cup of tea or coffee and you’ll be content.
